Goji's Graduates from RCI’s Caramels, Toffees & Brittles

SPRINGFIELD, MO – August 21, 2018– After three days of intensive education and hands-on lab sessions, twenty-two candy makers, including Janette Zacharias from goji's Neighborhood Treatery, recently graduated from Retail Confectioners International’s (RCI) Caramels, Toffees & Brittles course at Wockenfuss Candy Company in Baltimore, Maryland. Students in the course varied in age and experience, yet each of them graduated with a better understanding of the science behind caramel, toffee and brittle formulations.


“With the wealth of knowledge in the instructors, you may walk in with experience,  but you will leave with a new level of confidence and many new friends in the industry,” said Rosemary Mysliwec of Dolce Lusso Confections.


Caramels, Toffees & Brittles was led by confectionery and chocolate experts and designed to offer students optimal hands-on learning experience while benefiting from the knowledge and skills presented. “Students were able to get a better understanding of what is needed to make successful caramels, brittles and toffees and how to apply what they learned to real life,” said lead instructor Randy Hofberger, with R&D Candy Consultants. “For some it was validating that what they are doing is correct, and for others it was solving some of their current confectionery challenges.”
